2-Ingredient Banana Muffins

While gawking at Pinterest I came across a recipe for Pumpkin Muffins at Sweet Verbena made with only two ingredients, a can of pumpkin and a box of yellow cake mix.  I love Pumpkin muffins and knew I wanted to give it a try.  Then I wondered if you could make the same recipe with other fruit with similar texture.  I decided to give it a try using bananas.  The muffins turned out wonderful.  This is a great recipe for a really quick and easy breakfast.

Ingredients:

  • 1 box yellow cake mix
  • 4 large over-ripe bananas

Cream bananas with electric mixer.  Add cake mix and beat until blended.  Spoon batter into greased muffin tin filling 3/4 full.  Bake at 350 for 20-25 minutes.

I enjoyed the recipe so much I am going to try it using different ingredients such as a spice cake mix and butternut squash.  What ideas would you try?

    They look delicious! I am surprised that it is only two ingredients – I would have thought that there needed to be more “wet” ingredients to make the batter hold. What a great way to use bananas that are slightly beyond their prime.

    I am definitely going to try this on one of the days I’m too lazy to make banana bread out of my over-ripe bananas! :)
